Diners are beacons to the tired and hungry. Just thinking of that warm, fluorescent glow welcoming all and sundry to sidle up to the counter, order a slice of pie and a 99 cent cup of coffee makes us hungry.

These bastions of American cuisine also offer untold gourmet pleasures, where short-order cooks become chefs, and chefs become artists. No joke. One trip to Gracie's Luncheonette in Leeds, and you'll see what we mean.

Greene County is home to some of the best greasy spoon grub in the state, from doughnuts the size of dinner plates stuffed with hand-churned ice cream and drizzled with chocolate sauce, to grass-fed burgers served on homemade buns with a side of homemade ketchup.

We're proud of our diners and drive-ins here in the Catskills, and this is why: some of our best times are had sharing a homemade soda or late-night order of fries. We connect with friends and family at diners; we chow down, drink up, and don't worry about calories.

Gracie's Luncheonette in Leeds – What began as a food truck serving made-from-scratch American classics such as diner-style burgers, fried chicken, and donuts turned into a brick-and-mortar restaurant in Leeds offering the same classics in a clean, refined, rift on diner architecture. Ingredients are as sourced locally whenever possible, and menu items reflect the broad diversity of the American palate. Order a burger with Pimento Cheese and Jalapenos, Biscuits and Gravy off of the breakfast menu – which is served all day – or a Pastrami Sandwich made with house-cured and smoked brisket. If you're still hungry for dessert, Gracie's menu features classics such as ice cream sundaes, donuts and decadent pies.

Selena & Nick's Diner in Tannersville – This classic American diner is authentic from the outside in. Noted for their "comfortable, old-school" feel, and freshly prepared food, Selena & Nick's offers stellar breakfast, and lunch and dinner menus. Stuff your face with all you can eat pasta on Wednesday nights, or get back to basics with the oft-rhapsodized Chef's Salad.

Ambrosia Diner in Catskill – Three square meals and all of them delicious are served up daily at Ambrosia Diner. A hometown favorite offering everything from waffles with whipped cream to steak and fries, Ambrosia is a solid choice for breakfast, lunch or dinner.
